Blackberry Swirl Nice Cream.

I'm all about simple recipes--in my opinion, the fewer ingredients the better (as long as the taste isn't sacrificed!)! This "Blackberry Swirl Nice Cream" could NOT be ANY EASIER--two ingredients, five minutes, done. It really doesn't get any better than this, people!

           Blackberry Swirl Nice Cream.

                  Oooooooh my.....

Blackberry Swirl Nice Cream; Vegan, Gluten-free. Serves one.

Ingredients
1. One frozen banana, frozen in chunks
2. 1/2 cup frozen blackberries

Method
1. Place frozen banana chunks in your mini food processor and blend until smooth. Add blackberries and blend--pulse a few times. You don't want to purée the berries...just chop them. Leave some chunks.
2. Spoon into bowl and serve! Yum!

Sinless Strawberry Sorbet.

Every time is ice cream time, am I right?! And when it's 100% vegan, gluten free, sugar free, oil free, nut free, and made ENTIRELY FROM FRUIT, this "Sinless Strawberry Sorbet" lives up to it's name!

            Sinless Strawberry Sorbet.

                           Lush.

Sinless Strawberry Sorbet; Vegan, Gluten-free. Serves one ( makes one BIG serving!).

Ingredients
1. 3 cups frozen strawberries
2. 5-10 drops liquid stevia, flavor of choice (optional)

Method
1. Place frozen strawbs and optional stevia in your vitamix. Secure the top and turn it on. Blend VERY SLOWLY from low to high. When the strawberries are powdery, begin "folding in" the strawberries with the damper of our vitamix. This will create the "ice cream".
2. Keep mashing down and around until smooth and completely creamy. Scoop out with spoon and place in large bowl. Unless you're eating it IMMEDIATELY, cover and pop in the freezer.

Baked Snickerdoodle Oatmeal.

This doesn't need words. It's just so perfect! It's like Snickerdoodle cookie and oatmeal...all rolled into one! BOOM CKAKA LAKA! Literally heaven in a bowl. A perfect breakfast for a leisurely morning.

         Baked Snickerdoodle Oatmeal.

                       Mmmmm.

                   Simply perfect.

Baked Snickerdoodle Oatmeal; Vegan, Gluten-free. Serves one.

Ingredients
1. 1/2 cup oatmeal of choice (I used oatbran)
2. Scant 3/4-1 cup water
3. 1/2 tsp cinnamon
4. One packet stevia
5. 1/2 tsp baking powder

Method
1. Preheat oven to 350. In a medium size oven-safe bowl, mix together oats, baking powder, stevia, and cinnamon. Add water and let sit 10-15 minutes, until most of water is absorbed.
2. Place in oven and bake uncovered for 25 minutes. Remove, let cool, and enjoy!

NOTE: if you choose to use rolled or old fashioned oats instead of oatbran, you will probably want to reduce the amount of water you use. Oatbran is extremely absorbent because of the finer texture, whereas the absorption of whole oats is not as extensive.

Coconut-Basil Cream Pudding.

There are few flavor combinations that are more delicious and comforting than coconut and basil. I swear they were meant to go together. Tropical, sweet coconut paired with fresh and cool basil?! It's like a trip to the Bahamas in your mouth! So good.
This "Coconut-Basil Cream Pudding" is delicious as a breakfast addition, as well as a dessert or snack! It's great anytime of day! Quick, easy, and packed with high quality plantbased protein. Whip some of this up and you will NEVER go back to those gross, chemical-laden "Jello" Pudding Cups. Eww.

        Coconut-Basil Cream Pudding.

                         Heaven.

I made this dreamy dish with my treasured "Sweetleaf" brand coconut-flavored liquid stevia. You all know my utter OBSESSION with my beloved stevia. Since I am SOS-free, it's the only sweetener I use on a regular basis (I VERY RARELY use agave and molasses-only when I need the sticky consistency for a recipe). I am especially crazy in love with Sweetleaf brand. It is the ONLY brand of stevia I have tried that does not lend a bitter aftertaste. Also, they don't add any gross preservatives. IT'S JUST PURE STEVIA! Now that's what I'm talking about! Sweetleaf is the bomb--It's the only stevia brand I use!

                 Sweetleaf-LOVIN'.

         Arguably the best thing ever.

Coconut-Basil Cream Pudding; Vegan, Gluten-free. Serves one.

Ingredients
1. 9 oz. Morinu silken soft tofu
2. 15 drops coconut flavored Sweetleaf stevia
3. 1/4 tsp dried basil

Method
1. Combine all ingredients in your kink food processor and blend until super duper smooth and dreamy looking. Transfer into bowl and top with a sprinkle of dried basil for garnish. Serve!

Note: I mixed in about 1/4 cup of ground flaxseed to my pudding for some substance. It was delicious! Highly recommend.

Around the World Mega Salad.

If you all follow me on Instagram (@thefitveganginger--follow me! Hehe!) you will know my utter OBSESSION with giant salads...I have lovingly termed these gigantic veggie piles "Mega Salads". I've posted a few of my past fave mega salads on the blog, but this one tops them all. The eclectic combination of flavors really makes this salad pop. You've got crisp, tangy, spicy, fresh, and buttery all rolled into one TOTALLY BOMB dish. "Clean out the fridge salad" just became a new fave lunch.

         Around the World Mega Salad.

Around the World Mega Salad; Vegan, Gluten-free. Serves one (makes one GIANT salad!).

Ingredients
1. 8 cups packed fresh spinach leaves
2. 1 cup canned navy beans (don't sub with great northern or cannellini. Navy beans are essential in this recipe because of their smooth and buttery texture, which other white beans don't provide.)
3. 1/2 medium red bell pepper, chopped
4. 2 T bragg's liquid aminos
5. 1/2 tsp dried basil
6. 1/4 tsp fenugreek powder
7. 1/4 tsp curry powder
8. Pinch mustard powder
9. Onion, garlic, and black pepper to taste

Method
1. Place spinach in a HUGE bowl (DO NOT UNDERESTIMATE BOWL SIZE---I literally eat my salads out of a family size serving bowl...!) and too with red pepper chunks. Add beans and aminos and sprinkle on spices. Eat up! So good.

Note: because of all the different flavors in this salad, it goes well with almost anything as an addition to make a full meal. Think pita bread, brown rice, hummus on gluten free cracker, you name it. I may or may me have had this with my "Cinnamon Swirl Oatmeal", though....

Powdered Blueberries!

What happens when you get EXTREMELY LOW on food items?! You come up with EXTREMELY STRANGE food combinations. Case in point: my "Powdered Blueberries" recipe is very odd to say the least...but it's ROCKIN! So good. Super quick and easy and I'm gonna take a wild guess and say you already have all the ingredients (all TWO of them...hehe.)! Go ahead and give this one a go--you can eat them plain, use as an oatmeal topper, or even on a salad! The possibilities are endless, really!
