Peanut Butter Banana Breakfast Cookie Dough.

Have you ever been in a breakfast rut? Come on...y'all know what I'm talking about: cereal, oatmeal, tofu scramble, avo toast, repeat. The end. Boring, right? Yup, agreed. Sometimes you're tastebuds are just hankering for a change...and my Peanut Butter Banana Breakfast Cookie Dough delivers: not only is it packed with vitamins and healthy fats, but it literally tastes like you're eating dessert for breakfast. Even better?!: it takes about 3 minutes to make...IF THAT. Now if THAT doesn't make you wanna jump out of bed on Monday mornings, I don't know WHAT will...enjoy, guys! 

  Peanut Butter Banana Breakfast Cookie Dough. 

Peanut Butter Banana Breakfast Cookie Dough. Vegan, Gluten-free. Serves one. 

Ingredients
1. 1/2 overripe banana, mashed
2. 1/3 cup old fashioned oatmeal
3. 1 T powdered peanut butter
4. 3 T all natural peanut butter
5. 1/4 tsp cinnamon (optional, but recommended)
6. Toppings of choice (delish with fresh raspberries!)

Method 
1. Combine all ingredients in a medium sized mixing bowl and stir well. 
2. Scoop cookie dough into a small serving bowl and top as desired. Serve!

"Throw-It-Together Thursday". What to fix when you're too tired to think! (BONUS: TWO recipe this week!)

I think we all have that one night per week when we simply just don't want to cook. Or at least, we don't want to spend a long time thinking about WHAT to cook. Maybe you have a weekly after-work activity, late afternoon study group that always ends later than you expect it will, or an impromptu mandatory staff meeting...whatever it is for you, it's making you not wanna cook. We've all been there. For me, that day of the week is Thursday. I have to be at work very early on Thursdays, and get off just in time to head to ballet, which don't end until 9:30. You can probably imagine that by the time I get home on Thursday nights, I'm ready to eat and go to bed! So what are my favorite quick, healthy go-to meals and meal ideas? 


Wraps.
Wraps are one of my very favorite "go-to's." All you need is a gorilla or wrap of your choosing and whatever happens to be in your fridge! I've done sweet, savory, crunchy, warm, gooey, you name it...I've probably done it (I may or may not have done a sweet and savory combo wrap...don't knock it till you try it!). Let's take yesterday, for example:

Spinach Tomato "Ricotta" Wrap.

This was super simple and quick, but so so good! I simply took a gluten-free, spinach wrap, filled it with fresh spinach (you could also do steamed), topped it with my Vegan Ricotta Cheeze for my cookbook, and added fresh Roma tomato slices. I served it with some steamed carrots and asparagus, fresh fruit, and homemade tomato basil soup. Delish! And super quick.
What's your favorite type of wrap or tortilla?  Mine would have to be these guys...

I'm totally obsessed with wRAWps. They're gluten-free, vegan, nut-free, oil-free, sugar-free, AND 100% raw! They have tons of different flavors to choose from, perfect for whatever type of wrap you're craving! They even have pizza crusts, too!

Salads.
A big 'ol salad is ALWAYS a good idea, but ESPECIALLY on a "fast-food" night! Many times, I will make a big salad in the morning and leave it in the fridge so it's ready to go when I get home! And like wraps, salads don't require much thought, either: just use what you've got in your fridge...I have to say I've never eaten a gross salad! :) And in the winter, when you don't necessarily want a cold salad? I love doing WARM SALADS--simply steam or sauté all the veggies you would normally use raw! Steam spinach for your base, and add sautéed onions, tomatoes, bell peppers, and mushrooms. Add some canned chickpeas, fresh herbs, and a squeeze of lemon juice. Serve with cooked brown rice on the side. BOOM. So good.

Easy Asian Salad with Peanut Ginger Dressing. (recipe below!)

Easy Asian Salad with Peanut Ginger Dressing.

Ingredients
1. 1 cup fresh snap peas, chopped
2. 1 cup chopped red cabbage
3. 1/2 cup sliced white button mushrooms
4. 4 oz. water-packed extra firm tofu, diced
5. 2 T peanut butter of choice
6. 1/4 tsp ground ginger
7. 1 tsp soy sauce (or soy sauce substitute)
8. 1 1/2 T water
9. 1 tsp fresh lime juice
10. Pinch of stevia (or sweetener of choice)
11. Cilantro, for garnish (optional)

Method
1. Combine all salad ingredients in a large bowl and toss to mix.
2. Combine peanut butter, ginger, soy sauce, water, stevia, and lime juice in a small ramekin and whisk until thoroughly mixed. 
3. Drizzle dressing over salad and garnish with cilantro, if desired.

Bagels. 
Ooooooooh, who doesn't love a good old bagel?! Bagels are literally one of the most comforting foods on the planet, in my opinion. And they're such a great option for a quick evening meal: carbs are proven to help you sleep better, so they're great if you have to eat a late dinner! And they're super versatile: again, you can get totally creative with a bagel. Sweet or savory!

Casseroles.
Ahhh, the casserole. Another one of those things you can literally throw everything into a giant mixing bowl, mash it up, bake, and hey--you've got a delicious dinner! Even better? You can cook them ahead of time, store in the fridge, and warm back up in the microwave/oven when you get home late. Whoever invented the casserole, I love them. 
Here's a fun little casserole I created the other night, sort of inspired by...A CHILI DOG. Yes, I'm serious. (The recipe is still vegan of course, and TOTALLY healthier than even a vegan chili dog!). It combines loads of plant protein, gut-healthy probiotics from sauerkraut, tomatoes which pack a healthy dose of lycopene, and tons of flavor. I drizzled my casserole with my "Rockstar Ranch Dressing" for my cookbook, but get creative! Mustard would be delish too.

With toppings, of course.


Ingredients
1. 1 cup sauerkraut
2. 1/3 cup TVP granules
3. 1/4 tsp each onion and garlic powders
4. 1/2 tsp chill powder
5. Salt, to taste
6. 1/3 cup water
7. 1/2 cup canned diced tomatoes, drained
8. 2 T panko breadcrumbs (use gluten-free, if needed)
9. Toppings/dressing of choice (ketchup/mustard, etc.)

Method
1. Combine TVP, spices, and salt in a medium-sized bowl and mix well. Add water and microwave 2 minute.
2. Add TVP, sauerkraut, and tomatoes to a large bowl and mix very well. Spoon into small casserole dish and sprinkle with breadcrumbs. Bake, uncovered, at 350 for 25 minutes.
3. Remove from oven, let cool 10 minutes, and drizzle with toppings of choice. Serve warm, with a side salad, homemade potato chips, and fresh fruit.

USE YOUR IMAGINATION!
Other than my ideas above, use your imagination...and whatever is in your fridge! It's truly amazing the flavor combinations and tasty creations you can come up with by using fresh veggies and fruits. You really can't go wrong! The best thing you can do is experiment...and enjoy! :)

Gluten Free Protein Cake Donuts with Peanut Butter.

You need these in your life. These Protein Donuts are gluten free, oil free, sugar free, and super high protein (obviously, according to the name, haha), and delicious. All you need is about 35 minutes in the kitchen TOTAL to make them even more impressive! Add a little peanut butter for dipping goodness, and these little guys become a perfect combo of protein and carbs-the ultimate post workout snack! Enjoy!









Gluten Free Protein Cake Donut. Vegan, Gluten-free. Serves one. 


Ingredients
1. 1/2 cup gluten free oat flour
2. One scoop vegan protein powder (I used Sunwarrior vanilla)
3. One packet stevia powder
4. 1/2 tsp baking powder
5. Scant 1/2 cup water


Method 
1. Combine flour, protein powder, stevia, and baking powder in a medium sized bowl and mix well. 
2. Add water, stirring in as you go to avoid clumping. 
3. Pour batter into mini donut silicone/nonstick pan and bake
 350 for 25-30 minutes, until firm. 
4. Let cool 10 minutes before removing. Serve with PB!

Peanut Butter "SauerSPROUT" Sushi! (And my new #TFVGSushisunday contest!)

So I'm starting a new thing..."Sushi Sunday"! Every Sunday I'll be eating sushi for one meal out of the day...I'm going to try and see juuuuuust how many sushi combos I can come up with!! Why?? Simple. If you've read my "About Me" page, you already know that I have thyroid disease, and had to start taking thyroid medication at age 13. After years of up and down blood levels, from too much medication to not enough, my levels finally stabilized when I went vegan (#plantpower!). As amazing as this is, I want to take it a step further: I don't want to have to take artificial thyroid hormone replacement medicine anymore! I want to be wholly healthy--no foreign substances in my body...this is all fine and dandy and sounds super terrific, but for someone with thyroid disease, if you just up and quit your medication, it's disastrous. 
So what's the natural solution, you ask?! One (magical!) word...IODINE! Iodine is a vital nutrient that our bodies need, but are unable to produce on their own. Iodine is not found in many foods at ALLLLL, so most people opt to take it in supplement form. But real food is always better, as you all know! Which is where this monologue comes to a point, finally...nori, kelp, dulse, and other sea vegetables are the ONLY natural, vegan, supplement-free way to get iodine! So, basically, this is the reason behind my "Sushi Sunday" theme...I hope you'll all join me in sushi creating (not only on Sundays!), and that you enjoy the recipes I'll be sharing. Happy sushi-ing!

Ingredients
1. One nori sheet
2. 4 T peanut butter of choice 
3. 1/2 cup sprouts
4. 1/4 cup sauerkraut
5. 1/2 tsp ground ginger


Method
1. One of the best things about sushi, besides the taste? Fill. Roll. Cut. Eat. Done! It's so simple! For this roll, simply spread your PB over the nori sheet and top with WASHED and dried sprouts (wash carefully! Sprouts are known to carry bacteria--buy organic if possible). 
2. In a small bowl, mix sauerkraut with ground ginger, and add on top of sprouts. 
3. Time to roll it up! Slice before serving. And yes. You have to use chopsticks ;)

PB Coconut Lentil Stew over Sprouts.

Ingredients 
1. 1 cup canned lentils
2. 2 T ground golden flaxseed
3. 1 T coconut flour
4. 1 cup coconut milk
5. 1/4 tsp garlic powder
6. 1/8 tsp each onion powder and ginger
7. 1 cup frozen broccoli florets
8. 1 cup fresh broccoli sprouts 
9. 4 T powdered peanut butter 

Method
1. Combine all ingredients except coconut flour in a medium size soup pot. 2. Stir over medium heat. 
3. When lightly boiling, add coconut flour and stir constantly till thick. Serve over sprouts.

Butternut Squash Breakfast Bowl (aka Fall in a Bowl!).

So the arrival of cooler mornings has me craving cooler weather foods...or, in terms others can understand...PUMPKIN (duh...), root veggies, and, the star of this DELISH brekkie recipe: butternut squash. This simple creation started out as a "I really need to use that butternut squash in the fridge, so I'm gonna make breakfast out of it," thing...and quickly turned into a new fall breakfast fave. Hope you guys enjoy it too!

Butternut Squash Breakfast Bowl. Vegan, Gluten-free. Serves one. 

Ingredients
1. 3 cups raw butternut squash cubes
2. 15 drops vanilla stevia
3. 1/3 cup tvp granules
4. One packet stevia
5. 1/4 tsp cinnamon 
6. Two tablespoons peanut butter (I used powdered PB because of my fat intolerance...see my "About Me" page for my story!)
7. Two teaspoons maple syrup
8. Cinnamon for topping


Method
1. Steam or boil squash until very tender. Drain, and whip in food processor with stevia. 
2. Toast tvp in a skillet over medium heat, after mixing it with stevia packet and cinnamon. Cook, stirring regularly, until toasted. 
3.  Spoon squash purée onto large plate and add "granola" and peanut butter on the side. Drizzle maple syrup on top and sprinkle with cinnamon. Serve!

Holiday post! (Well, sort of...): PB Corn Oatmeal...aka cinco de mayo oats!

Ok, first of all...I am In fact aware that convo de mayo is not a real "holiday" (in the U.S. at least!), but for me, it's one more day I can create a themed oat bowl! 💃😂 
This oatmeal bowl is soooo good! It's such an eclectic combination of flavors, but I'm convinced that is what makes a good recipe--creative flavor combining!! I think you all will agree after tasting this one...hope you enjoy! 😊


                  PB Corn Oatmeal.

PB Corn Oatmeal. Vegan, gluten-free. Serves one. 


Ingredients
1. 1/2 cup oats of choice
2. 1 packet stevia
3. 1/2 cup frozen sweet white corn
4. 2 T PB 
5. Large handful cilantro, chopped
6. Sprinkle of cinnamon (optional, but recommended)


Method
1. Place your dry oats in a medium size loco safe bowl and stir in stevia. Set aside. 
2. Place corn in a separate small bowl and nuke 50 seconds. Add to oats and mix in water. Stir and nuke 2 minutes. 
3. Sprinkle with chopped cilantro, add PB, and top with cinnamon if desired. Enjoy!

Mudslide Oatmeal.

Before you run away from your computer at the title of this recipe, hear me out: chocolate. Luscious. Creamy. Chocolate-y. Yeah. Still wanna run? (Or are you gonna go make this oat bowl like a smart person?!)


                 Mudslide Oatmeal. 

    It only looks like mud...tastes so bomb!


Mudslide Oatmeal. Vegan, Gluten-free. Serves one. 


Ingredients
1. 1/2 cup oatmeal of choice (I used oatbran)
2. 1 1/3 cups water, divided 
3. 1 T carob powder
4. One large zucchini, sliced and chopped 
5. 1/2 tsp cinnamon 
6. 10 drops coconut stevia liquid
7. 2 T salt free all natural peanut butter
8. Cinnamon, for garnish


Method
1. Boil your water in a small soup pot. 
2. Add Zuke chunks and bring to a boil. 3. Reduce heat  to medium and remove from. Usenet. 
4. In a separate bowl, mix oats, Carob, and 1/2 tsp cinnamon. 
5. Return pot to heat and stir in dry ingredients, along with stevia. 
6. Cook, stirring regularly, and adding a little water at a time until desire thickness is reached. 
7. Top with PB and cinnamon and enjoy warm.

Sweet 'n Spicy Banana Bread Oatmeal!

Will this winter ever end?! It really feels like not....😭😭😭 I'm cold-natured (which is precisely why I'm a figure skater...? Haha! I'm so silly!), so this weather is literally killing me: today is the first day ALL WEEK that the temps have been above 22 degrees. NO I AM NOT KIDDING. YES I STILL LIVE IN VIRGINIA...aka the SOUTH where it's supposed to be WARM. Lol. 
Needless to say, I've been making a TON of warm food. You guys know I am primarily (80%) raw, but I've had to make an exception this week--BRING ON THE HEAT BABY! And boy, does this hawt oat bowl ever! Sinlessly delicious, super easy, and will have you sweating (I'm serious...I DID! True story.) in no time 🔥👌 enjoy, my little snow bunnies! I'm off to make tea...❄️😂

Ingredients
1. 1/2 cup old fashioned oats
2. 1 cup almond milk
3. 1 overripe banana, sliced 
4. 1/4 tsp (less if you're a spice wimp) cayenne
5. 1/2 cup water
6. 2 T Peanut Butter (optional, but OH SO HIGHLY recommended!)



Method 
1. In a small pot on the stove, bring your almond milk to a boil. Remove from burner, reduce heat to medium, stir in oats, and return to heat. 
2. When beginning to thicken, add sliced banana, cayenne, and water. Cook, stirring constantly, until thickened to desired consistency. 
3. Top with PB and EAT! Serve with water hehe...🔥😳😋

Chocolate Banana Bread Overnight Oatmeal.

Ok you guys. This jar of oats is about as close to heaven on earth as you can get! Ohhhhh boy are you in for a treat! I dare say this breakfast might make you become a morning person...!


      Chocolate Banana Bread Overnight      Oatmeal. 



Chocolate Banana Bread Overnight Oatmeal. Vegan, Gluten-free. Serves one. 


Ingredients
1. 1/2 cup old fashioned oats 
2. 1 cup almond milk 
3. One VERY overripe banana
4. 1 T carob powder (can use cocoa)
5. 2 T salt-free PB
6. Cinnamon, optional


Method 
1. Combine oats and carob in a jar. Secure kid and give it a good shake to combine. 
2. In a separate bowl, mash your naner. 
3. Add mashed banana to jar and pour almond milk over. Mix well. 
4. Cover and place in fridge at least 24 hours. In the morning, top with PB and optional cinn. DEVOUR!!!! 


Note: you can hear in the microwave if you want, but I think these are better left chilled.

Ingredients
1. 1/2 cup oats of choice 
2. One very overripe banana, mashed in separate bowl
3. 1/4 tsp cinnamon, plus extra for garnish
4. 2 T all natural peanut butter 


Method 
1. Place oats in a microwave safe bowl and add cinnamon and mashed banana. Mix well. Stir in 1 cup water and microwave high 2 minutes. 
2. Top with PB and sprinkle with cinnamon. Eat!

Kickin' PB-Cayenne Oatmeal!

Talk about SPICY--man oh man is this oat bowl yumalish 😋 Sweet AND spicy and super delicious, this 5 minute dish is the perfect breakfast, lunch, OR dinner addition!

Ingredients 
1. 1/2 c oats of choice
2. 1 c water
3. One packet stevia

5. 2 T natural creamy peanut butter


Method 
1. Combine oats, stevia, cayenne and mix. Stir in water and microwave 2 minutes on high power. 
2. Add peanut butter on top and sprinkle win cayenne for garnish. Yummo!

Peanut Butter-Cinnamon-Apple Sammie.

Sometimes, you just want a good old SANDWICH, am I right?! My Sammie craving hit a couple evenings ago...mid-essay writing. I had been typing for the last, oh, I couldn't even say...hence, food was a top priority. However, I needed something quick and filling  I also needed to use up the last of the apples I bought a couple weeks ago from when I went apple picking with some buddies! So, this beautiful Sam was born...toasty bread + creamy and filling PB + crisp apple + cinnamon for good measure = yum. That is all. 



    Peanut Butter-Cinnamon-Apple Sammie. 



      I KNOW I KNOW I KNOW RIGHT?!



Peanut Butter-Cinnamon-Apple Sammie; Vegan, Gluten-free option. Serves one. 



Ingredients 
1. 2 slices bread of house (use gluten free if desired. I used Ezekiel. Yum!)
2. 2 T all natural creamy peanut butter (salt-free AND oil-free)
3. 1/2 Apple, sliced 
4. Cinnamon to taste


Method
1. Toast your bread to your liking...I like mine burnt! 😜 
2. Spread one T PB one each slice of bread. Top with apples and sprinkle with cinn. DONE!

Mystery Breakfast Revealed!: Apple Pie Peanut Butter Mash Up Bowl.

So remember my "mystery breakfast" pic I posted on my Instagram page last Saturday?! We'll wonder no more...here it is! I call it "Peanut Butter Apple Pie Mash Up Bowl". Because long titles mean delicious food 👌😂 


        My "secret ingredients"...yum!

Peanut Butter Apple Pie Mash Up Bowl!; Vegan, gluten-free option. Serves one. 


Ingredients 
1. One serving "creamy vanilla pudding" (recipe below)
2. 4 T peanut butter of choice
3. 1/2 cup unsweetened applesauce
4. 1/4 cup wheatbran (for gluten free, use ground flaxseed)
5. Cinnamon to taste

For "Creamy Vanilla Pudding":
1. 9 oz. silken tofu
2. 15 drops vanilla flavored liquid stevia


Method
1. Blend both ingredients until smooth and plce in bowl. Cover and refrigerate until ready to use.

For the Mash Up Bowl:

Method
1. Sprinkle wheatbran/flaxseed over pudding. Top with peanut butter, then applesauce. Sprinkle with cinnamon and start mashin'! Yum!

Peanut Butter Sushi Rollup!

With all my recipe creating for my new cookbook (hopefully debuting in 2016!), my blog recipes have unfortunately taken a back seat. But this is a quick meal addition or snack that I created on a rushed morning! Super simple (as always!) and super delish (also as always!).  The veggies used for the filling are very versatile and even optional. Get creative! 


          Peanut Butter Sushi Rollup! 


                         So good. 


Peanut Butter Sushi Rollup!; Vegan, Gluten-free. Serves one. 


Ingredients 
1. One nori sheet
2. 3 T peanut butter of choice (I used powdered peanut butter mixed with 1 1/2 T water)
3. Ginger powder to taste 
4. Thinly sliced veggies of choice (good options include cucumber, red bell pepper, carrots, and avocado)
5. Bragg's liquid aminos for dipping, optional


Method
1. Lay nori sheet out flat on a plate. In a small bowl, mix peanut butter and ginger. Spread over nori. 
2. Top with veggies and roll up like sushi. Slice and serve with liquid aminos, if using. Enjoy! You will....!

Carob Pancakes with Peanut Butter and Sweet Cherries.

Um. Yum. That is all. 



    Carob Pancakes with Peanut Butter and Sweet Cherries. 


Carob Pancakes with Peanut Butter and Sweet Cherries; Vegan, Gluten-free. Serves one (3 smallish pancakes). 


Ingredients
1. 1/3 cup gluten free oat flour
2. 1/4 tsp baking powder
3. 1/2 packet stevia
4. 1 T carob powder
5. 1/3 cup water
6. 2 T peanut butter of choice 
7. 1/3 cup frozen sweet cherries, thawed in microwave for 30 seconds


Method
1. In medium size bowl, combine flour, baking powder, stevia, and carob. Whisk well to remove any clumps and add water. Stir well. 
2. Cook in nonstick pan over medium heat, about 3 minutes per side or until edges look browned and insides begun to bubble. Flip and cook 3 more minutes (approximately). Repeat! 
3. Once all pancakes are cooked, arrange on a plate. Take largest cake, spread with peanut butter, and place a couple cherries on top. Slightly mash down with back of spoon and place next largest pancake in top. Repeat until you get to the last cake. Top with a few cherries and a dollop of PB. Enjoy!

Ingredients 
1. 2 slices while grain bread of choice (I used Ezekiel brand. Use gluten free if needed)
2. 2 T peanut butter 
3. 1/2 banana
4. 1/4 tsp vanilla powder
5. 1/8 tsp (or more!) cinnamon


Method 
1. Heat a nonstick skillet over medium heat. 
2. In a small bowl, mash your banana half. Add vanilla and cinnamon and mix up well. Spread banana mixture on one slice of the bread. 
3. Spread peanut butter on the other slice of bread and smash the two sides together gently. It will be pretty thick, so handle with care. 
4. Lay on skillet and cook 3-4 minutes per side, or until desired "grill" is reached (mine took about 4 minutes). Enjoy!



Silky Peanut Butter Pudding.

Peanut. Butter. Pudding. Yes people, it's vegan, gluten free, salt-oil-sugar free, and the WHOLE recipe had less than 150 calories. I'm not kidding! If I was, that would be one cruel joke...

Silky Peanut Butter Pudding; Vegan, Gluten-free. Serves one. 



Ingredients
1. 5 oz. silken tofu
2. 2 T peanut butter ofchoice (I used "Just Great Stuff" brand, which is like PB2)
3. 10 drops liquid stevia



Method
1. In your mini food processor, combine silken tofu as peanut butter. If you are using a powdered variety, mix it with 1 T water in a so waste bowl BEFORE adding it to the processor. 
2. Blend until smooth, scraping sides as needed. Add stevia once blended and blend again to distribute. 
3. Spoon into bowl, top as desired, and EAT! It's also perfectly acceptable to lick the sides of your food processor...

Apple "Nachos".

This is about the easiest recipe in the world. In fact, it's hardly a recipe! But I had to share it anywho. It's super quick and easy, and you probably have all the ingredients right in your kitchen. So what are you waiting for?! Go make some Apple "Nachos"! 



                   Apple "Nachos". 



Apple "Nachos"; Vegan, Gluten-free. Serves one. 


Ingredients 
1. One small to medium apple, sliced
2. 2 T powdered peanut butter (I use "Just Great Stuff" brand), mixed with 1+ T water
3. 1/4 cup TVP granules 
4. Sprinkling of cinnamon 


Method
1. Arrange your apple slices on a large plate. 
2. Mix your peanut butter and water until combined. You want this on the runny side-think more peanut butter "sauce" than actual PB. 
3. Drizzle peanut sauce over apple slices and sprinkle with TVP granules (DO NOT HYDRATE! Leave them crunchy!) and cinnamon to taste. Enjoy!

Spicy Thai-Peanut Butter Meatless Balls

I love Asian food, as you all know. I also love pasta dishes. I have tried a bunch of vegan meatball recipes, but so far this one is definitely my favorite. Unlike most, this "meatless ball" recipe is tofu-based, whereas most are bean or TVP based. I thoroughly enjoyed these...I hope you do too!


     Spicy Thai-Peanut Butter Meatless    Balls. 


Spicy Thai-Peanut Butter Meatless Balls; Vegan, Gluten-free. Serves one. 


Ingredients
1. 4 oz. firm tofu
2. 1 T red curry paste
3. 1 tsp all natural creamy peanut butter
4. 1 T ground flaxseeds



Method
1. Preheat oven to 400 F and line a baking sheet with parchment. 
2. Combine tofu, paste, and PB in mini food processor and blend until smooth. 
3. Transfer to bowl and stir in flax. 
4. Roll into 6 balls and place on parchment. Bake uncovered for 20 minutes. Let cool and serve! 


 I served my meatless balls with a Thai-style pasta dish (tofu noodles with a coconut-tomato-ginger sauce). Yummy!
