Apple Pie Oatmeal.
This. Is. Amazing. That. Is. All. GO MAKE THIS NOW!
Apple Pie Oatmeal; Vegan, Gluten-free. Serves one.
Ingredients
1. 1/2 cup old fashioned oats
2. 1 cup almond milk
3. 3/4 cup water
4. 2 T ground flaxseed
5. One small Apple, chopped
6. 1/2 cup unsweetened applesauce
7. 1/4 tsp cinnamon
8. 1/8 tsp ginger
9. Generous pinch nutmeg
10. Dash allspice/cloves
Method
1. Bring almond milk to a boil, and reduce heat to medium.
2. In a bowl, mix oats, flax, and spices. Add to almond milk and stir well. When beginning to thicken, add chopped Apple, water, and applesauce. Turn heat to high, and cook 15 minutes, stirring constantly (and watching for splatters!!), until desired thickness is reached.

Mystery Breakfast Revealed!: Apple Pie Peanut Butter Mash Up Bowl.
So remember my "mystery breakfast" pic I posted on my Instagram page last Saturday?! We'll wonder no more...here it is! I call it "Peanut Butter Apple Pie Mash Up Bowl". Because long titles mean delicious food 👌😂
Peanut Butter Apple Pie Mash Up Bowl!; Vegan, gluten-free option. Serves one.
Ingredients
1. One serving "creamy vanilla pudding" (recipe below)
2. 4 T peanut butter of choice
3. 1/2 cup unsweetened applesauce
4. 1/4 cup wheatbran (for gluten free, use ground flaxseed)
5. Cinnamon to taste
For "Creamy Vanilla Pudding":
1. 9 oz. silken tofu
2. 15 drops vanilla flavored liquid stevia
Method
1. Blend both ingredients until smooth and plce in bowl. Cover and refrigerate until ready to use.
For the Mash Up Bowl:
Method
1. Sprinkle wheatbran/flaxseed over pudding. Top with peanut butter, then applesauce. Sprinkle with cinnamon and start mashin'! Yum!

Protein-packed Breakfast Oat Cakes.
These Protein-packed Breakfast Oat Cakes are a good filling breakfast option for when you have a bit more time in the morning. Warm and delicious, these cookie-like oat cakes go perfectly with banana nice cream!
Protein-packed Breakfast Oat Cakes; Vegan, Gluten-free. Makes one serving (2 small cakes).
Ingredients
1. 1/2 cup oatbran
2. 1/2 cup unsweetened apple sauce
3. One scoop protein powder of choose (I used vega vanilla almondilla flavor)
4. 2 T ground flaxseeds
5. 1/2 tsp cinnamon
6. 1/2 packet stevia
7. Scant 2 T water
Method
1. In a medium size bowl, mix together the oatbran, protein powder, flaxseeds, stevia, and cinnamon. Add applesauce and water and stir.
2. Spoon batter into two non stick mini baking pans. Bake at 350 F for 20 minutes. Let cool before removing. Enjoy!

Sweet cinnamon buckwheat biscuits
Everyone loves a good biscuit. I mean, how comforting is it to snuggle up with a good book, a nice fuzzy blanket, a warm mug of tea, and a nice plate of freshly baked biscuits?! Ok. Now I need to go make these...
Sweet Cinnamon Buckwheat Biscuits; Vegan, Gluten-free. Makes 7 small biscuits.
Ingredients
1. 1/2 cup buckwheat flour
2. 3 T water
3. 1 tsp baking powder
4. 1/4 tsp baking soda
5. 1/3 cup unsweetened applesauce
6. 1/4 tsp cinnamon
7. 1/2 to 1 packet stevia
Method
1. Preheat oven to 400 F and line a baking sheet with parchment.
2. In a medium size bowl, whisk together dry ingredients. Add applesauce and water and stir well.
3. Using about 2 T at a time, scoop dough into hands, roll into a ball, and flatten slightly onto parchment. Repeat to make 7 total. Bake uncovered for 13 minutes. Let cool slightly before serving. Enjoy!
