Flax 'n Protein Power Balls!

If you have followed me or my recipes for any length of time at all, you already know that I'm pretty much OBSESSED with flaxseed. I'm also pretty obsessed with protein powders...and the only thing better than these two things enjoyed separately, is these two things COMBINED! All you need is rice protein, ground flaxseed, stevia, water, and 5 minutes prep time (and a few hours in the fridge)...then BAM! Just like that, new fave recipe. That was easy.

Flax 'n Protein Power Balls!
Vegan, Gluten-free. Serves one.




Ingredients
1. 1/4 cup rice protein (brown rice or regular)
2. 2 T ground flaxseed
3. one packet stevia powder
4. 3-4 T water


Method
1. In a medium-sized bowl, mix protein powder, flax, and stevia.
2. Add water 1 T at a time until you get a workable consistency--don't add so much as to make them gummy...you just want them pliable.
3. Divide dough into 6 small sections and roll into balls.
4. Place power balls on a small plate, cover, and refrigerate for 1 hour or more, to firm up a bit.
5. Remove from fridge and enjoy!

Hazelnut Spice Pudding.

Pudding. Oh, how I adore thee! 😂😂😂 but really though. My puddings are probably one of my TOP comfort foods. So sweet and creamy, and they ALL take literally 7 minutes. It's the perfect recipe--perfect for breakfast, lunch, snack, or dinner! 


           Hazelnut Spice Pudding.

Hazelnut Spice Pudding; Vegan, Gluten-free. Serves one. 


Ingredients 
1. 9 oz. Morinu silken tofu
2. 15 drops liquid hazelnut stevia
3. 1/8 tsp EACH cinnamon and ginger
4. Dashes of nutmeg and allspice
5. Toppings of choice, optional but recommended (my fave is ground flaxseeds...gives a really nice "nutty" texture. YUMALISH!)


Method
1. So easy. One step! Add all ingredients to food processor and blend until perfectly smooth. Spoon into bowl, add toppings, and enjoy!

Protein-flax Spread.

I love playing around with protein powder. There are SO many things you can do with it it's unbelievable. This is one of my favorite uses for my beloved protein powder. Super simple and ridiculously tasty, I like this stuffed in a wrap, spread in toast, as a condiment for veggies, and on top of oatmeal.

Protein-flax Spread; Vegan, Gluten-free. Serves one. 


Ingredients 
1. 2 T protein powder of choice (In the picture above I used Jarrow Mixed Berry flavor)
2. 2 T ground flaxseeds
3. Water as needed
4. 1/2 packet stevia (optional. You can omit it if your protein powder is already sweetened. Jarrow brand is unsweetened, so I used the stevia.)


Method
1. In a small bowl, whisk together the protein powder, flax, and stevia (if using). 
2. Add a little water at a time as you stir. Keep stirring and adding water until you get a gooey "frosting" like spread. The amount of water varies with the brand of protein used. I've tried lots of different brands and the amount of water I need is never the same! 
3. Use as desired! Yum.

Protein-packed Breakfast Oat Cakes.

These Protein-packed Breakfast Oat Cakes are a good filling breakfast option for when you have a bit more time in the morning. Warm and delicious, these cookie-like oat cakes go perfectly with banana nice cream!

                 So. So. So. Good. 



Protein-packed Breakfast Oat Cakes; Vegan, Gluten-free. Makes one serving (2 small cakes). 


Ingredients
1. 1/2 cup oatbran 
2. 1/2 cup unsweetened apple sauce 
3. One scoop protein powder of choose (I used vega vanilla almondilla flavor)
4. 2 T ground flaxseeds 
5. 1/2 tsp cinnamon
6. 1/2 packet stevia
7.  Scant 2 T water


Method 
1. In a medium size bowl, mix together the oatbran, protein powder, flaxseeds, stevia, and cinnamon. Add applesauce and water and stir. 
2. Spoon batter into two non stick mini baking pans. Bake at 350 F for 20 minutes. Let cool before removing. Enjoy!

Spicy Thai-Peanut Butter Meatless Balls

I love Asian food, as you all know. I also love pasta dishes. I have tried a bunch of vegan meatball recipes, but so far this one is definitely my favorite. Unlike most, this "meatless ball" recipe is tofu-based, whereas most are bean or TVP based. I thoroughly enjoyed these...I hope you do too!


     Spicy Thai-Peanut Butter Meatless    Balls. 


Spicy Thai-Peanut Butter Meatless Balls; Vegan, Gluten-free. Serves one. 


Ingredients
1. 4 oz. firm tofu
2. 1 T red curry paste
3. 1 tsp all natural creamy peanut butter
4. 1 T ground flaxseeds



Method
1. Preheat oven to 400 F and line a baking sheet with parchment. 
2. Combine tofu, paste, and PB in mini food processor and blend until smooth. 
3. Transfer to bowl and stir in flax. 
4. Roll into 6 balls and place on parchment. Bake uncovered for 20 minutes. Let cool and serve! 


 I served my meatless balls with a Thai-style pasta dish (tofu noodles with a coconut-tomato-ginger sauce). Yummy!
